Carrot Noodle Antioxidant Salad
This salad was inspired by a recipe I saw that made this a "sweeter" twist with the addition of cinnamon and served cold. I revamped what I saw and added additional ingredients, cooked the carrots, and topped with protein to make this a full, extremely healthy meal.
I bought the carrot noodles frozen from Fresh Thyme; but I believe many grocery stores and brands that spiralize vegetables carry many variations that can be substituted here.
